Voters in the wilds of Greene County haven’t yet discovered this restored art deco newcomer in an 1800s hotel; chef Ana Sporer (formerly of NYC’s Pierre hotel) blends city sophistication and Hudson Valley produce on her French-Eclectic menu, with items like coq au vin and fillet mignon.

ZAGAT Survey 2007 /08
Open for dinner on Fridays and Saturdays, chef/owner Ana Sporer’s Eclectic-French Ruby’s is still a “shining star” for local “foodies” who “love” the “small” menu,” tiny, restored” art deco hotel, “accommodating staff” and “bonus of an art gallery upstairs”; another plus: “delightful creek side dining in summer”, when it’s open on Thursday’s too.

“Best crab cakes on the East Coast. We drive across the river for the crab cakes alone”
- Michael, Chatham, NY

“Chef Ana is god's gift to Greene County foodies, and artist and co-owner Frank Giorgini is a local legend and a great host. Don't miss the occasional live music performances and the changing art gallery exhibits upstairs! Dining by the creek in summer is a delight.”

“Best crab cakes I’ve ever had, and I grew up on the Chesapeake.”
- Linda, Baltimore. MD

“Ana’s crab cakes are the very best. They have spoiled us for all others”
- Alan, NYC

“Ana’s food is consistently better than most of the fancy, expensive restaurants that I end up eating at in NYC.”
- Ray, Dobbs Ferry, NY

“Ana’s Oriental salmon is so unique, so delicious and so aromatic. I keep ordering it over and over again”
- Jason, NY

“I had the Filet Mignon last weekend. It was cooked perfectly. It was so good I had a dream about it during the week. I had to come back up and have it again”
- Rob, Garden City, NY

“What a treat! Great menu and great atmosphere. Menu ranges from tasty soups, salads and sandwiches to complex and perfectly delectable world class entrees. Chef Sporer's crab cakes and Cobb salad are particularly yummy. The atmosphere is perfect for any occasion. There is a lively front dining room, a quieter more sophisticated rear dining room, a cute creek-side patio in summer, and stroll upstairs to host Frank's art gallery between courses!”

“Ana’s salads are the best – so fresh and lush. The warm pecan encrusted goat cheese is unbelievable.”
- D, Westchester, NY

“I have been meaning to do this for well over a year (since we began going to Ruby's regularly for special dinners.) Chef/Owner Ana Sporer and her husband Frank NEVER dissappoint. Her crab cakes are truly beyond compare - I've never tasted a better one before or since. Mussels and Salad Nicoise were two things I'd usually steer clear of - until I tasted Chef Sporer's. Even a "simple" cobb salad is elevated to something spectacular. Go!”
