Ruby’s Hotel is an 1800’s architectural gem, lovingly restored, and furnished with all the original tables, chairs, lighting fixtures, Art Deco Bar and soda fountain.  The charm and warmth of the bar/bistro area greets you upon entering.  Enjoy fine dining in the back room amidst an amazing gallery of original oil paintings depicting scenes of Provence, France, all painted circa 1945. Our new out door creek side bar and dining area is the place to be on those warm summer evenings. Chef Ana Sporer was formally a chef at the Pierre in Manhattan for six years and chef instructor at New York Restaurant School and the Institute of Culinary Education (previously Peter Kumps).  She will treat your taste buds to creatively and freshly prepared  culinary delights using the finest organic produce from local purveyors when available.

Ruby’s Hotel now accepts dinner guests by on-line reservation only. Since Co-Vid, we no longer accept walk in customers. We require guests to be vaccinated against the Co-Vid virus for your safety and ours. To make a reservation you must be on our restaurant email list. Please go to rubys3689@gmail.com and request to be added to our weekly email list. Each week you will receive an email with upcoming open dates and menu. The menu goes out on Wednesday. Please order your dinner choices, arrival time and number of guests by email on Thursday or by no later than noon on the evening you wish to be seated. We will email back your confirmation. Directions:

Just west of the intersection of Rte. 67 and Rte. 32 in Freehold, NY.  From NYS Thruway, take Exit 21 to Rte. 23 West, then right onto Rte. 32 North. Continue to Freehold and make a left on Rte. 67. We are just over the new bridge on the left. Ruby’s is only 18 min. from Windham, 24 min. from Hudson and 38 min. from Albany.
