Chef/owner Ana Sporer was formally a chef at the Pierre in Manhattan for six years and chef instructor at New York Restaurant School. Ana currently teaches at the Institute of Culinary Education (previously Peter Kumps), NYC. She will treat your taste buds to creatively and freshly prepared culinary delights using organic produce from local purveyors when available. In addition to the menu below chef Ana offers seasonally changing specials like soft shell crabs w/corn salsa, grilled calamari, veal saltimbocca, duck confit, coq au vin, Mediterranean lamb, and crème brulee. Chef Ana uses only the freshest vegetables, mostly from her organic garden in the summer, always pleasing the vegetarians among you with her special creations. A sample of the seasonally changing dinner menu is provided here, in addition to daily appetizer and entrée specials. Ruby’s is available for private parties, cooking parties and catering.
